Fall Farmers Market Recipes

 

Zucchini Boats

Ingredients

  • 7 medium zucchini - Any Produce Vendor
  • 1 tbsp olive oil
  • 1/2 yellow onion, diced- Any Produce Vendor
  • 2 cloves of garlic, minced- Any Produce Vendor
  • 1 small green bell pepper, diced- Any Produce Vendor
  • 1 ear sweet corn kernels cut off the cob- Any Produce Vendor
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • Juice of 1/2 a lime
  • 1/3 cup chopped fresh cilantro- Any Produce Vendor
  • 1 cup dried black turtle beans (3 cups cooked) - Sweet Dirt Acres
  • 1 cup cooked white quinoa
  • Salt & Pepper to taste
  • 1 1/2 cups enchilada sauce
  • 1 cup shredded cheddar cheese - Kickaas Cheese

Enchilada Sauce Ingredients

  • 1/4 cup vegetable oil
  • 2 tbsp flour
  • 1/4 cup chili powder
  • 8oz can tomato sauce
  • 1 cup veggie broth
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion salt
  • Salt to taste
  • Pinch of cinnamon

Directions

Cooking the Black Beans:

  1. Place 1 cup dried beans in bowl and cover with 3-4 inches of water – let soak overnight
  2. Strain and rinse beans – pick out any debris
  3. Place in pot on stove add in aromatics such as garlic, spices, onion, bay leaves, etc.
  4. Turn stove on medium-high until you reach a boil, then turn down to medium-low and let simmer for 1.5-2 hours

Cooking the Quinoa:

  1. Rinse quinoa in fine mesh colander for at least 30 seconds
  2. Place 1 cup quinoa in pot and add 2 cups water
  3. Bring water to a boil then decrease heat to medium-low and let simmer 15-20 minutes
  4. Remove pot from heat, cover, and let steam for 5 minutes
  5. Remove lid and fluff quinoa with fork – all water should have been absorbed

Making the enchilada sauce

  1. Heat oil in a skillet over medium-high heat.
  2. Stir in flour and chili powder and reduce heat to medium. Cook until the mixture is lightly brown. Whisk constantly to prevent burning.
  3. Gradually stir in tomato sauce, veggie broth, and spices into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly.
  4. Remove from heat and let sit

Making the Zucchini Boats

  1. Preheat oven to 400 degrees
  2. Cut zucchini in half lengthwise. Use spoon to scoop out the inside of the zucchini leaving ¼ inch – ½ inch shell. Chop the zucchini you scooped out and set aside. 
  3. In large skillet heat oil over medium heat. Add onions and cook until translucent. 
  4. Stir in 1 cup chopped zucchini, spices, corn, green peppers, and lime juice. Cook for additional 2-3 minutes. 
  5. Remove from heat and stir in black beans, quinoa, cheese, ½ cup enchilada sauce, salt, and pepper. 
  6. Spray (2) 9x13 pans and pour in a little enchilada sauce. Place zucchinis in dish and use a spoon to scoop mixture from skillet into the zucchini.
  7. Cover with foil and bake for 30 minutes. 
  8. Remove foil and bake for additional 5 minutes.

 

Awesome Apple Muffins

Ingredients

1 cup oil
3 eggs
2 cups sugar
1 tsp. vanilla
3 1/2 cups apples, diced
3 cups flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts, peanut butter chips, or raisins (optional)

Instructions

Combine and set aside the oil, eggs, sugar, and vanilla. Combine flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and optional ingredients. Bake in muffin tin, with or without liners. Bake at 350 degree for 27 minutes. Makes 24 muffins.

 

Calabacita con Elote

(Zucchini with Sweet Corn)

Ingredients

Frying pan & spoon
2 cup sweet corn, chopped
2 zucchini, chopped
1 tomato, chopped
1/2 onion, chopped
1 soup spoon of oil (olive or vegetable)
Pinch of salt & black pepper for taste

Instructions

Heat oil in a frying pan. Add onion, fry it for a minute or two. Add sweet corn, cook it for five minutes, stirring occasionally. Add zucchini, cook for two more minutes. Add tomato, salt, and pepper. Cover pan with a lid and cook, simmering, for another five minutes. Enjoy it on its own or as a side. Pairs nicely with chicken, pork, or fish!
